Aydın ilinde yetiştirilen ticari çilek çeşitlerinin fiziksel, kimyasal, biyoaktif ve aroma özellikleri | Physical, chemical, bioactive and aroma properties of commercial strawberry cultivars grown in Aydın province

Aydın ili, çilekyetiştiriciliğinde ve ihracatında ülkemizde Mersin’den sonra ikinci sıradadır.Bu çalışma kapsamında, Aydın sınırları içerisinde yoğun şekilde yetiştiriciliğiyapılan ve en çok ihracatı gerçekleştirilen ticari çilek çeşitlerinin fiziksel,kimyasal, biyoaktif ve aroma özellikleri belirlenmiştir. Bu kapsamda, ticarihasat olgunluğundaki Florida fortuna,Rubygem ve Sabrina çilek çeşitlerine toplam kuru madde, pH, toplam asitlik,renk, C vitamini, toplam fenolik madde, toplam flavonoid, antioksidan kapasite,HPLC ile şeker kompozisyonu ve GC-MS ile aroma kompozisyonu analizlerigerçekleştirilmiştir. Sonuçlar incelendiğinde Rubygem çeşidinin en yüksek kuru madde içeriğine sahip olduğu; Sabrina çeşidinin ise daha asidikkarakteristiğe sahip olduğu bulgulanmıştır. Sabrinaçeşidinin koyuluk, kırmızı renk ve sarı renk yoğunluklarının diğer iki çeşidekıyasla daha yüksek olduğu da belirlenmiştir. Biyoaktif madde içerikleri veantioksidan kapasite yönünden Rubygemçeşidinin ön plana çıktığı anlaşılmaktadır. Rubygemçeşidi çileğin daha düşük miktarda sakaroz içerdiği; toplam şekerin büyükoranda indirgen şekerlerden (glikoz ve fruktoz) oluştuğu saptanmıştır. GC-MSile aroma kompozisyonu analiz sonuçlarına göre Florida Fortuna, Sabrina ve Rubygemçeşitlerinde sırasıyla 16, 18 ve 20 adet uçucu bileşen tanımlanmış ve genelolarak meyve kokusu veren esterlerin tüm çileklerde etken bileşen olduğugözlemlenmiştir.

Aydın Provinceranks second after Mersin in strawberry cultivation and exportation in Turkey.Within the scope of this study; physical, chemical, bioactive and aromacharacteristics of commercial strawberry cultivars, which are mostly cultivatedand exported within the borders of Aydın, were determined. In this context,total dry matter, pH, total acidity, colour, vitamin C, total phenoliccompounds, total flavonoid, antioxidant capacity, sugar composition by HPLC andaroma composition by GC-MS analyses were performed to commercially ripestrawberry cultivars which are Florida fortuna, Rubygem and Sabrina. The resultsshowed that Rubygem cultivar had thehighest dry matter content while Sabrinacultivar was found to have more acidic characteristics. It was also determinedthat the darkness, red colour and yellow colour indexes of Sabrina were higherthan the other two cultivars. In terms of bioactive compounds and antioxidantcapacity, Rubygem was observed as theforemost cultivar. Rubygem cultivarcontains less sucrose than other strawberry cultivars; total sugar of thiscultivar was found to consist largely of reducing sugars (glucose andfructose). According to the results of aroma composition analysis by GC-MS; 16,18 and 20 volatile compounds were identified in Florida Fortuna, Sabrina and Rubygemcultivars and esters that give fruit odour were found to be active aromacomponents in all strawberry cultivars.
