Propuesta de mejora para el proceso de vermicompostaje de los residuos de alimentos de origen vegetal procedentes de las cafeterías de la Universidad Autónoma de Occidente

La Universidad Autónoma de Occidente cuenta con un sistema de vermicompostaje con precompostaje capaz de tratar alrededor de 295 kg de residuos de alimentos crudos de origen vegetal, semanalmente. Sin embargo, presenta limitaciones en el control de variables operativas, lo que afecta la eficiencia del proceso y la calidad del vermicompost. Problemas en el comportamiento de los parámetros que pueden comprometer la estabilidad del producto final, reduciendo su potencial uso como fertilizante orgánico. El objetivo de este estudio fue evaluar y proponer condiciones operativas adecuadas que optimicen el proceso y mejoren las características del vermicompost obtenido. Para ello, se evaluó la condición operativa actual (CO-1) y se formularon cinco condiciones operativas diferentes (CO-2, CO-3, CO-4, CO-5 y CO-6), que fueron analizadas y contrastadas bajo recomendaciones técnicas y normativas, así como respecto al comportamiento de la CO-1. Se midieron parámetros fisicoquímicos claves en el sustrato, el material en transformación y en el producto final. Se evaluó el comportamiento de los parámetros de acuerdo con los rangos de operación del proceso encontrados en literatura para el adecuado funcionamiento y con la Norma Técnica Colombiana 5167, para el caso del producto final. El ajuste del uso de enmiendas, la relación carbono/nitrógeno, el contenido de humedad, el pH y las temperaturas permitieron optimizar el desempeño del sistema. Los resultados indicaron la necesidad de implementar mejoras en el proceso de precompostaje. La CO-3-PC y CO-5-PC fueron las más adecuadas para el precompostaje, ya que garantizan la estabilidad del sustrato y optimizan el manejo y uso de recursos. La CO-3-PC, conformada solo por residuos de alimentos crudos de origen vegetal, inició con una humedad del 88% y finalizó en 77%, con un aumento en la densidad de 551,3 kg/m³ a 823,1 kg/m³. Su pH pasó de 5,45 a neutralidad, y el carbono orgánico total disminuyó de 419 g/kg a 318 g/kg, manteniéndose en etapa mesófila. Por su parte, CO-5-PC, con 89% de residuos de alimentos y 11% de poda y césped, redujo su humedad del 80% al 77%, mientras que su densidad aumentó de 386,7 kg/m³ a 858,1 kg/m³. Su pH subió de 5,05 a 8,8, y el carbono orgánico total pasó de 439 g/kg a 405 g/kg. Esta condición alcanzó la fase termofílica (55 °C) durante la primera semana y parte de la segunda, retornando a la mesófila desde el día 11. La CO-3-VC, con un 65% de material precompostado y 35% de estiércol vacuno, presentó el mejor desempeño en el vermicompostaje. Inició con una humedad del 76% y finalizó con 60%, reduciendo su densidad de 908,3 kg/m³ a 521,5 kg/m³. El pH se mantuvo estable, disminuyendo de 7,9 a 7,2 unidades, mientras que la materia orgánica (sólidos volátiles) pasó de 63%ST a 56%ST y el carbono orgánico total de 331 g/kg a 276 g/kg, en cinco semanas. Brindando un producto final dentro de los rangos establecidos por la NTC 5167. Sin embargo, es necesario confirmar las ventajas operativas mostradas en este estudio bajo un seguimiento operativo completo de vermicompostaje con precompostaje

The Universidad Autónoma de Occidente has a vermicomposting system with pre-composting capable of treating about 295 kg of raw food waste of vegetable origin per week. However, it has limitations in the control of operating variables, which affects the efficiency of the process and the quality of the vermicompost. Problems in the behavior of the parameters that can compromise the stability of the final product, reducing its potential use as an organic fertilizer. The objective of this study was to evaluate and propose adequate operating conditions to optimize the process and improve the characteristics of the vermicompost obtained. For this purpose, the current operating condition (CO-1) was evaluated and five different operating conditions (CO-2, CO-3, CO-4, CO-5 and CO-6) were formulated, which were analyzed and contrasted under technical and regulatory recommendations, as well as with respect to the behavior of CO-1. Key physicochemical parameters were measured in the substrate, the material under transformation and in the final product. The behavior of the parameters was evaluated in accordance with the operating ranges of the process found in the literature for adequate operation and with Colombian Technical Standard 5167, in the case of the final product. The adjustment of the use of amendments, the carbon/nitrogen ratio, moisture content, pH and temperatures allowed optimizing the performance of the system. The results indicated the need to implement improvements in the pre-composting process. CO-3-PC and CO-5-PC were the most suitable for pre-composting, since they guarantee substrate stability and optimize the management and use of resources. CO-3-PC, consisting only of raw food residues of vegetable origin, started with a moisture content of 88% and ended at 77%, with an increase in density from 551.3 kg/m³ to 823.1 kg/m³. Its pH went from 5.45 to neutral, and total organic carbon decreased from 419 g/kg to 318 g/kg, remaining in the mesophilic stage. CO-5-PC, with 89% food waste and 11% pruning and grass, reduced its moisture content from 80% to 77%, while its density increased from 386.7 kg/m³ to 858.1 kg/m³. Its pH rose from 5.05 to 8.8, and total organic carbon increased from 439 g/kg to 405 g/kg. This condition reached the thermophilic phase (55 °C) during the first week and part of the second week, returning to the mesophilic phase on day 11. CO-3-VC, with 65% precomposted material and 35% cow manure, presented the best vermicomposting performance. It started with 76% moisture and ended with 60%, reducing its density from 908.3 kg/m³ to 521.5 kg/m³. The pH remained stable, decreasing from 7.9 to 7.2 units, while organic matter (volatile solids) went from 63%ST to 56%ST and total organic carbon from 331 g/kg to 276 g/kg, in five weeks.
