英语. Powder milk (PM) as a complex multicomponent biosystem is subjected to significant changes in the protein structure affected by the methods of production processing of raw milk. The depth of these transformations is closely related to the intensity of heat exposure, which leads to denaturation and aggregation of milk proteins, which affects the PM quality. These prerequisites became the basis for a research series conducted by the team of the All-Russian Research Institute of Dairy Industry aimed at studying the influence of technological modes on the quality of protein clots obtained by milk fermentation. The objects of research are clots obtained by fermentation of reconstituted skim milk, produced according to two technological production regulations: for yoghurt and for cottage cheese. The study purpose is to establish patterns of the effect of heat treatment of raw milk and the depth of denaturation of proteins in skim milk powder (SMP) on the quality of cottage cheese and yoghurt clots obtained from reconstituted milk. Four SMP batches differing in processing conditions from low temperature to moderately high one were studied. The research was focused on the functional properties of curds, including water retention and protein transfer to whey. It has been confirmed that the degree of water binding in yoghurt and cottage cheese directly depends on the class of SMP heat treatment: with increasing the heat treatment degree, the moisture-retaining ability of clots is enhanced. The results can serve as a basis for developing recommendations for PM use to produce cultured milk products.

俄语. Сухое молоко (СМ) представляет собой сложную многокомпонентную биосистему и подвержено значительным изменениям белковой структуры под воздействием технологических режимов его производства. Глубина этих трансформаций тесно связана с интенсивностью теплового воздействия, что приводит к денатурации и агрегации молочных белков, что влияет на качество СМ. Эти предпосылки стали основой для проведения цикла исследований специалистами ВНИМИ, направленных на изучение влияния технологических режимов, на качество белковых сгустков, полученных сквашиванием молока. В качестве объекта исследований в работе определены сгустки, полученные путем ферментации восстановленного обезжиренного молока, выработанные по двум технологическим регламентам производства: йогурта и творога. Цель исследования - установление закономерностей влияния термической обработки молока-сырья и глубины денатурации белков сухого обезжиренного молока (СОМ) на качество сгустков творога и йогурта, полученных из восстановленного молока. Исследованы 4 партии сухого обезжиренного молока: СОМ1, СОМ2, СОМ3, СОМ4, отличающиеся режимами обработки от низкотемпературной до умеренно высокой. Исследования сфокусировались на функциональных свойствах сгустков, включая влагоудержание и переход белка в сыворотку. В результате подтверждено, что степень связывания воды в йогурте и твороге напрямую зависит от класса термообработки СОМ: с увеличением степени термообработки влагоудерживающая способность сгустков усиливается. Результаты работы могут послужить основой для разработки рекомендаций по применению СМ в производстве кисломолочных продуктов.
