Analysis of the possibility of reusing the filtrate of stillage on technological indicators in the production of alcohol | Исследование влияния повторного использования фильтрата барды на технологические показатели при производстве спирта

The current processing technology of starch-containing raw materials into alcohol assumes formation a number of liquid production wastes (effluents), which have the potential for multiple further uses. Grain stillage is the main waste from alcohol production, the disposal of which is strictly regulated and controlled at the legislative level. During processing, the grain stillage is usually divided into dispersed and liquid fractions, but namely sediment (cake) and stillage filtrate. The sediment is dried to obtain feed products; the filtrate is evaporated to a dry matter concentration of at least 30% and dried together with the sediment or disposed of as industrial waste. However, stillage filtrate contains protein, vitamins, amino acids and other substances that are valuable in the technological process and finished marketable products. Stillage filtrate has the potential to be used as a source of nitrogen nutrition and to replace water at the stage of batch preparation. This paper assesses the efficiency of returning stillage filtrate to the stage of batch preparation to replace 30, 40 and 50% of water. At the same time, the main technological characteristics of the resulting batch, wort, mash, and grain stillage are determined. This technique has a beneficial effect on the technological parameters at all stages of production. The concentration of dry matter, protein, and alcohol yield increases. Due to the intensification of the fermentation process, it is possible to reduce the fermentation time by 10–12 hours, which creates a positive economic effect. In addition, reducing the number of harmful emissions into the environment improves the environmental safety of the enterprise.

В действующих технологиях переработки крахмалсодержащего сырья на спирт образуется ряд жидких отходов производства (стоков), которые имеют потенциал для многократного использования в технологических процессах. Зерновая барда - основной отход производства спирта, утилизация которого строго регламентируется и контролируется на законодательном уровне. В процессе переработки образуемую зерновую барду обычно разделяют на две фракции: дисперсную (осадок) и жидкую - фильтрат барды (ФБ). Из высушенного осадка получают кормовую продукцию, а ФБ упаривают до концентрации сухих веществ не менее 30% и сушат вместе с осадком или утилизируют как промышленный отход. Однако ФБ содержит белок, витамины, аминокислоты и другие вещества, которые представляют ценность в технологическом процессе и готовой товарной продукции. ФБ имеет перспективу быть использованным в качестве источника азотистого питания и для замены воды на этапе приготовления замеса. Произведена оценка эффективности возврата ФБ на стадию приготовления замеса для замены 30, 40 и 50% воды. Определены основные технологические характеристики получаемого замеса, сусла, бражки и зерновой барды. Установлено, что этот прием благоприятно влияет на технологические показатели на всех этапах производства. Увеличивается концентрация сухих веществ, белка, выход спирта. Благодаря интенсификации процесса возможно снижение продолжительности брожения на 10–12 ч, что создает положительный экономический эффект. Снижение количества вредных выбросов в окружающую среду повышает экологическую безопасность предприятия.
