Effects of growing location and variety on free tryptophan and mineral nutrient content in wheat

Tryptophan (Trp) is an essential amino acid for mammals since they cannot synthesise it. Wheat (Triticum aestivum L.) is a major source of dietary Trp, and wheat high in Trp would thus be very beneficial. This study investigated the impact of location and wheat variety on the content of free Trp and mineral nutrients in wheat grain. Four wheat cultivars from national variety tests on wheat with varying protein contents were selected from seven different locations of Sweden representing different climatic zones and soil contents of trace elements. Grain was analysed for Trp content using reversed phase HPLC. Mineral nutrients were analysed using inductively coupled plasma emission spectrometry. Wheat yield and grain content of nutrients and Trp differed significantly between sites. High N content in grain was correlated with a high content of Cu, Fe and S, and also Ca and Mg. However, it was correlated with a low content of K and Na. Trp content was positively correlated with Na and Zn content and negatively correlated with K/Na and K/(Na+Zn) ratio. The varieties differed in Trp content and the two ratios, but there were no significant differences in yields between the varieties at any location. The results indicated salt stress induction of Trp synthesis, which may protect wheat against salt stress and yield losses.

The present study was undertaken to estimate enzymatically hydrolysed and non–hydrolysed wheat (Triticum aestivum) and rye (Secale cereale) bran microflora. Enzymatic hydrolysis was accomplished by α – amylase from Bacillus amyloliquefaciens and by Viscozyme L which contain a wide range of enzymes responsible for the breakdown of carbohydrates into simple sugars. Wheat and rye bran samples were collected from native mills, namely Stock Company (SC) ‘Rigas dzirnavnieks’ wheat bran with large particle size (WLSR), SC ‘Jelgavas dzirnavas’ rye bran with small particle size (RSSJ), SC ‘Dobeles dzirnavnieks’ wheat bran with small particle size (WSSD) and wheat bran with large particle size (WLSD). Gained results indicate that before enzymatic hydrolysis all of the bran samples showed similar microbiological contamination with total plate count (TPC), yeasts and lactic acid bacteria. Enzymatic hydrolysis of bran gives the possibility to partially eliminate the microbiological contamination with TPC, yeasts and lactic acid bacteria. The amount of microorganisms after enzymatic hydrolysis (before storage) were decreased and ranged from 5.26 ± 0.04 to 5.45 ± 0.01 log CFU gE-1, from 4.81 ± 0.01 to 5.60 ± 0.05 log CFU gE-1, and from 4.09 ± 0.01 to 5.10 ± 0.05 log CFU gE-1, respectively. After eight weeks of storage (temperature – 20 ± 1 °C, relative humidity – 40 ± 1%) enumeration of microorganisms showed significant decrease of colony–forming units in all bran samples. The amount of TPC, yeasts and lactic acid bacteria in the control bran samples fluctuated in a range from 4.84 ± 0.04 to 5.49 ± 0.05 log CFU gE-1, from 4.86 ± 0.03 to 5.25 ± 0.03 log CFU g-1, 3.53 ± 0.03 to 4.21 ± 0.02 log CFU gE-1 respectively.

Cereal and whole grain products are an important source of dietary fiber in the human diet. Since the milling process highly influences the proportions of the different cell types in the bran, it is expected that brans originating from different genetic/agricultural backgrounds and produced by different processes have different chemical composition. Wheat (Triticum aestivum) bran has not been studied in Latvia, therefore the aim of the present study was to analyze physical – chemical characteristics of wheat bran from Latvia’s industrial mills. Four bran samples were collected from two industrial mills: Stock Company ‘Dobeles dzirnavnieks’ and SC ‘Rigas dzirnavnieks’. All experiments were performed at the Food Technology of Latvia University of Agriculture in May 2011-February 2012. The particle size distribution of the bran samples was determined by sieving. The content of titratable acidity (TA) was detected by titration with 0.1 M NaOH till pH 8.5 was stable for 1 minute. Wheat bran colour was analysed by Hunter Lab colour measurement instrument using ColorTec colorimeter PCM/PSM in CIE L * a * b* system. Moisture content was analyzed using standard ICC 110/1 method by sample drying for 2 h at 150 °C. Results showed that there were significant differences between varieties (p0.05) for titratable acidity and for particle size, but no significant differences (p0.05) were found between the varieties in moisture, pH and colour. TA varied from 6.40±0.71 to 12.05±0.21°, moisture content- from 10.01±0.51% to 11.61±0.47%, pH–from 6.31±0.61 to 6.80±0.05, but colour of bran between the samples did not significantly differ.

Taste, smell and the flavour are the most important attributes determining the quality of bread or baked cereal products in general. Bread flavour is composed of hundreds of volatile and non-volatile compounds, i.e. many alcohols, ketones, aldehydes, acids, esters and other compounds. Many researchers have been studying volatile compounds in different breads worldwide, but in Latvia only few studies are conducted on volatile compounds in bread and its production stages. The aim of this research was to analyse the composition of volatile compounds during wheat dough fermentation. Experiments were done in 2011 and carried out in the Laboratory of Bread Technology and Laboratory of Packing Material Investigations at the Department of Food Technology in the Latvia University of Agriculture. An investigation of volatile compounds was done using solid-phase microextraction (SPME) and gas-chromatography mass-spectrometry (GC-MS). Volatile compounds were analyzed on the 10th, 20th and 30th minutes of wheat dough fermentation. In a fermentation process of wheat dough totally 15 volatile compounds were detected. Eight of them were alcohols, two aldehydes, two ketones, one ester, one acid and one terpene. Three volatile compounds – 1-octanol, caryophyllene and acetophenone, were detected in the dough samples only after 30 minutes of fermentation – those were not detected at the earlier stages of fermentation. The peak areas of 11 volatile compounds increased, but peak area of one volatile compound decreased along the fermentation time. The study proved that solid-phase microextraction can be used for detection of volatile compounds in wheat dough fermentation process.

Wheat (Triticum) is one of the three most important field crops used for food in the world, as well as in Latvia. The two-factorial trial was conducted at the Research and Study farm ‘Pēterlauki’, Latvia, with the aim to find out the effect of soil tillage and crop rotation on winter wheat grain yield formation. Two soil tillage systems (conventional and reduced), and three crop rotations with different winter wheat (Triticum aestivum) proportion in it (100, 67 and 25%) and different fore-crops (wheat, oilseed rape (Brassica napus ssp. oleifera), faba bean (Vicia faba)) were used. Long-term trial was started in 2009, however, the data from 2016/2017, 2017/2018 and 2018/2019 growing seasons was used for this report. The highest average wheat yield was harvested in 2017 (7.17 t haE−1), and it was significantly (p is less than 0.001) higher than yields in 2018 and 2019 (on average 6.18 t haE−1 and 5.68 t haE−1, respectively). Crop rotation with winter wheat proportion 25%, in which faba bean was wheat fore-crop, showed the highest average grain yield (7.35 t haE−1), but the lowest yield was obtained in rotation with 100% wheat proportion (on average 5.52 t haE−1). Crop rotation scheme had a significant influence on the yield (p is less than 0.001) and 1000 grain weight (p is less than 0.001). Forecrop influenced the yield (p is less than 0.001), number of spikes per 1 square m (p is less than 0.001), and number of grain per spike (p=0.008) significantly. Soil tillage did not affect the studied parameters importantly. Conditions of the trial year affected all parameters significantly.

Nowadays, veganism is becoming increasingly popular, because health concerns are usually the primary reason why people turn to vegan diet. The aim of the study was to identify the supply of vegan products on the Latvian market by analysing the ingredients used in the production of the products, nutritional and energy value of vegan products. 192 vegan products made in 20 different countries and available in online stores that offer their goods on the Latvian market were analysed. The research was carried out from January to March 2020. Information on the country of origin, ingredients, nutritional and energy value of the products was taken from product labels. The majority of the vegan products in Latvian online stores come from Germany. The most important ingredient in the production in product groups such as meat substitutes and dairy alternatives is soya (Glycine max.), which provides high protein content. The vegan products could not be characterized as low in fat, as the average fat content in the various product groups ranged from 7.9±1.7 to 19.7±3.3 g 100 gE−1 of product, except beverages. The average energy values for all product groups varied between 210.7 kJ 100 mLE−1 for beverages and 1226.0 kJ 100 gE−1 for snacks. There would be a need for everyday vegan products in the Latvian market, as most of the products are snacks at the moment, and legumes should be used as ingredient in the production of new vegan products with increased nutritional value.

The main direction of using wheat grains is grinding them into low-extraction flours. The flours collected from individual passages differ in terms of chemical composition and physical properties, which in turn differentiates their baking value. The aim of the study was to evaluate the baking value of passage flours obtained from the milling of spring and winter wheat grain. Wheat grain was milled in a 6-pass laboratory mill MLU-202 by Bühler. The baking value of the obtained passage flours was evaluated by an indirect method (protein content, gluten content and quality, falling number, farinograph analysis) and by a direct method (by baking and performing quality evaluation of the obtained bread). The research showed that the efficiency of flours from individual milling passages varied. The passages flours differed significantly in terms of chemical composition and baking value. The highest flour yields were obtained from the first and second grinding stages, while the smallest from the third grinding stage. Ash and total protein content, flour water absorption, and amylolytic enzymes activity increased together with the subsequent milling stage in both reduction-passage and grinding-passage. The gluten content increased with the next reduction stage, while it decreased with the subsequent grinding passage. The bread from the laboratory baking test was diversified in terms of sensory characteristics, loaf volume, and crumb porosity. The best quality bread was obtained from flour from the first two reduction passages. The lowest quality bread was obtained from flour from the final grinding passage.

The effect of selenium on the content of thiamine (vitamin B1), riboflavin (vitamin B2), as well as pantothenic acid (vitamin B5) in wheat (Triticum aestivum L), hull-less barley (Hordeum vulgare L.) and hull-less oats (Avena sativa L.) grains during germination were investigated. The winter wheat grain variety 'Zentos', hull-less barley and hull-less oats were used for study. Grains were soaked for 120 hours totally in solutions containing selenium from 10 to 200 mg lE-1 in the form of sodium selenate (Se+6). Grains with moisture content of 43%-44% were let to sprout at ambient temperature of 18+-2 deg C. The content of B1, B2 and B5 vitamins in germinated grains were determined using standard methods. Laboratory studies showed that changes in vitamin B1, B2 and B5 content depend on selenium concentration and kind of grains. Selenium additives promote biochemical activity of vitamin B1 and content of this vitamin decreases after 5 days' germination in all investigated grains at all applied selenium concentrations. Selenium concentrations of 10 and 25 mg lE-1 promote forming of vitamin B2 in wheat, barley and oat grains. The changes in vitamin B5 content depend on selenium concentration and kind of grains.

Cereals, the yield of which is strongly influenced by a well-selected variety, belong to the most important crops of organic farming, grown on arable land. At first a questionnaire study was executed among organic farmers in 2006 to gain information concerning the choice of variety, structure of growing, and yield of cereals in the Czech Republic. The actual cultivars of wheat are bred to be suitable for intensive farming. Therefore, not all the actual cultivars are suitable for organic farming. The methodology of tests of the suitability of cultivars for organic farming was elaborated and tested in 2006. Particular morphological, biological and agricultural features were evaluated. Selected Austrian cultivars, which were recommended for in organic farming system and breeded strains were tested. It is difficult to achieve sufficient protein content in grain in the organic farming system. The fact that the protein content in landraces of wheat is higher than the protein content in modern breeded varieties was confirmed. These varieties adapted to local conditions very well. Most of the evaluated varieties contain more crude protein in grain than modern varieties and may achieve a very good-quality production, but on a lower yield level the same as varieties of emmer.

The mean content of minerals in grains varies significantly among different parts of the world as it depends on the type of grain growing conditions and fertilizer application. In this study, the content of minerals in the wheat, oat and barley grains of the crop of the year 2006 from different regions of Latvia were investigated. The grain samples were analysed for K, Mg, Ca, Na, Cu, Mn, Fe, and Zn using Atomic Absorbtion Spectrometer, and for P using spectrophotometer. Phosphorus content in different types of grains varied from 3.10 to 5.65 g kgE-1, potassium - from 4.37 to 6.10 g kgE-1, calcium - from 0.40 to 1.40 g kgE-1, magnesium - from 1.20 to 1.68 g kgE-1, manganese – from 14.50 to 55.54 g kgE-1, copper - from 3.35 to 6.01 g kgE-1, zinc - from 18.72 to 31.84 g kgE-1, iron - from 42.39 to 120.40 g kgE-1, and sodium - from 32.34 to 55.52 g kgE-1. The greatest difference was found between the content of manganese and iron in barley, wheat and oat grains, but small difference was between the mean content of P, K, Zn, Cu, Mg, and Na.
