Garlic (Allium sativum L.) is a vegetable that is known to be medically beneficial and has been around since the past in the world cuisine. The unique taste and smell of garlic affects its raw consumption negatively. One of the functional uses of garlic, ‘black garlic’ is produced by fermenting white garlic under certain temperature and humidity conditions. Thus, the bitter taste and smell of garlic disappears and also changes occur in its nutritional value. Studies show that black garlic has anticancer, antitumor, antiallergic and antimicrobial effects. It also plays protective and therapeutic role against diabetes, obesity, cardiovascular diseases. This product, which is new for many countries, is not well known and consumed in our country too. In this study, the bioavailability of black garlic was highlighted and information was given about its production and antioxidant activity.

The wide-ranging use of antibiotics and medicaments has resulted in chemical residue and resistant pathogens in cured fish. Chemical residue not only pollutes the environment, but also threatens consumer’s health. On the contrary, garlic as a well-known natural antibiotic that causes no environmental or physical side effects has shown to be effective for the treatment of many diseases in humans and animals. In aquaculture applications, garlic promotes growth, improves the immune system, stimulates appetite, and reinforces the control of fungal and bacterial pathogens. This review emphasis on the application of garlic in promotes of fish growth and the expectations of using garlic arrangements in aquaculture.

Dünya’da ve Türkiye’de sarımsak üretimi ve tüketimi artmaktadır. Fakat Türkiye’nin dünya sarımsak üretimi içindeki payı geçtiğimiz 30 yılda %4 den %0.4 seviyesine gerilemiştir. Benzer şekilde coğrafi işaret sahibi Kastamonu sarımsağının Türkiye üretimindeki payı da %25 seviyesinden %20 seviyesine gerilemiştir. Bu çalışmada Kastamonu’daki sarımsak üreticileri ile yüz yüze anket çalışması yapılarak üretim teknikleri ve sorunları incelenmiştir. Elde edilen veriler ışığında üretici profili ve uygulama alışkanlıkları masaya yatırılmıştır. Üretimde mekanizasyon düzeyi artmakla birlikte, üretimin her safhasında yüksek işgücü gereksinimi devam etmektedir. Küçük parsellerde, yüksek kimyasal girdilerle bilinçsiz üretim söz konusudur. Sarımsaklar ilkel depolama koşullarında saklanmakta ve kayıplar oluşmaktadır. Bölgede herhangi bir üretim planlaması olmayıp, üretim ve satışa dair ortak bir oluşum bulunmamaktadır.
