Farklı Çözündürme Yöntemlerinin Dondurulmuş Midye ve Karides Etlerinin Kalite Parametreleri Üzerindeki Etkisi 全文

Bu çalışmada, farklı çözündürme yöntemlerinin, dondurulmuş midye ve karides örneklerinin mikrobiyal, fiziksel ve duyusal kalitesi üzerine etkileri araştırılmıştır. Çözündürme işlemi, buzdolabında (B4: 4±1ºC), oda sıcaklığında (O22: 22±1ºC), ılık suda (I30: 30±1ºC) ve sıcak suda (S55: 55±1ºC) gerçekleştirilmiştir. Toplam mezofilik bakteri sayısı, her iki örnekte de en düşük B4 (2,74 log KOB/g) ve S55 (3,35 log KOB/g) yöntemleri ile çözündürülen gruplarda tespit edilirken, en yüksek I30 grubunda bulunmuştur. Öte yandan en yüksek değerler ise her iki gıda örneğinde de I30 grubunda bulunmuştur. Psikrofilik bakteri sayısı ise, en düşük S55 ile çözündürülen grupta tespit edilmiştir. Renk analizi sonuçlarına göre, en düşük L* değeri her iki örneğin I30 gruplarında bulunurken, oksidasyon ile ilişkilendirilen b* değeri ise en yüksek, midye örneklerinde O22 ve karides örneklerinde ise B4 grubunda tespit edilmiştir. En düşük su aktivitesi değeri midye örneğinde B4 grubunda bulunurken, karides örneğinde 022 grubunda tespit edilmiştir. Duyusal analiz sonuçlarına göre; buzdolabında çözündürülen her iki örneğin genel kabul edilebilirlik puanı en yüksek bulunmuştur. Sonuç olarak, kalite parametrelerinin tamamı değerlendirildiğinde her iki grupta da, buzdolabında ve sıcak suda çözündürmenin en iyi yöntem olduğu belirlenmiştir.

Determination of genetic resources and their diversity constitutes are the initial step of the breeding programs. Before starting to the selection of the desired properties, many molecular methods are used to determine the existing genetic potential and determine the genotypic values. Many molecular methods (RAPD, RFLP, AFLP, SSR and DNA sequencing etc.) based on PCR technology are used to identify populations, identify genes related to yield and resistance, and demonstrate phylogenetic relationships. Many software’s for the analysis of molecular datasets obtained from molecular methods have been developed and the field of bioinformatics was born. In this study, after DNA sequence analysis; it is aimed to give information about haplotype analysis by determining SNPs (Single Nucleotide Polymorphism's) in individuals of populations, calculation of the genetic distance among populations and within populations, and software and analysis used for phylogenetic tree drawing.

Gezginci arıcılık; koloni verimliliğinin artırılmasında önemli bir uygulama olmakla birlikte son zamanlarda kolonilerin nakliyesinde için işçi bulmak önemli bir sorun haline gelmeye başlamıştır. Arı taşımacılığının genellikle iller arasında ve gece saatlerinde yapılması zorunluluğu, ayrıca arı sokması problemleri nedeniyle çalıştıracak eleman bulunamaması sorununu da beraberinde getirmiştir. Gezginci arıcılıkta taşımacılığın iller arasında yapılması yanında, kolonileri hem yüklerken hem de indirirken ayrı işçilik giderleri gerektirmesi de işletme giderlerini artıran bir diğer faktördür. Bunun sonucu olarak da arıların taşınmasında işçi bulmak hem güç olmakta hem de işçilik maliyetlerinin yüksek olması nedeniyle gezginci arıcılık ekonomik olmaktan uzaklaşmaktadır. Sürekli artan yakıt fiyatlarıyla birlikte nakliye giderlerinin de artması gezginci arıcılığı olumsuz etkileyen bir diğer olumsuzluktur. Arı yükleme ve indirmede yaşanan bu problemlerden dolayı bir arıcı konakladığı yerden memnun olmasa da kolonilerinin yerini hızlıca değiştirememekte ve sezonu verimsiz bir şekilde geçirmek zorunda kalmaktadır.

This study aimed to investigate the effect of solid-state fermentation on the nutritional composition of cottonseed meal (CSM), sunflower meal (SFM) and hazelnut kernel meal (HKM). In this study, each feedstuff was divided into two treatment groups (unfermented and fermented) with five replicates. Nutritional changes in the feedstuffs were determined by analyzing crude protein, ether extract, ash, crude fiber, neutral detergent fiber, acid detergent fiber contents. Solid-state fermentation had effects on the nutritional composition in all feedstuffs. The best improvement in nutritional quality was obtained from the HKM with increasing the crude protein and decreasing the structural carbohydrates content. Fermented HKM can be considered as an alternative protein feed for soybean meal considering the nutritional composition.

Probiyotik gıdalar, sindirim sisteminin çalışmasına yardımcı olan canlı mikroorganizmaları içeren gıdalardır. Bu gıdaların tüketimi sağlığın korunmasına ve bağışıklık sisteminin güçlenmesine olumlu katkı sağlamaktadır. Yapılan bu çalışma, probiyotik ürünlerin tüketim durumu ile tüketicilerin probiyotik ürünler hakkındaki bilgi düzeyini saptamak amacıyla yapılmıştır. Araştırma sonucunda ankete katılan bireylerin %51,7’si bayanlardan, %48,3’ü erkeklerden oluşurken yaşları 18 ile 65 arasında tespit edilmiştir. Probiyotik ürünler hakkında bilgiye erkekler %31,4 oranında sahip iken bayanlar %61,1 oranında sahip olduğu tespit edilmiştir. Ayrıca öğrenim seviyelerinin ve ekonomik durumların artışına bağlı olarak probiyotik ürünler hakkında bilgi seviyesinin anlamlı derecede arttığı görülmüştür. Probiyotik ürünleri tüketenlerin oranı %26,0 iken tüketenlerden fayda gördüğünü düşünen bireyler %79,1 olarak belirlenmiştir. Ek olarak probiyotik ürünleri tüketenlerin %77,3’ü bu ürünlerin doğal olduğunu düşünmektedir. Sonuç olarak probiyotik ürünlerin sağlığımıza olumlu katkısı olmasına rağmen tüketimi ve hakkındaki bilgi yeterli seviyede değildir. Kişilerin öğrenim seviyesi ve ekonomik refahı yükseldikçe probiyotik ürün tüketimi ve bilgi düzeyi artmaktadır. Bu nedenle buna benzer toplumun bilgisini ölçmeye dönük çalışmaların periyodik olarak yapılması önerilmektedir.

The growth of fish in intensive fish farming is carried out completely by the feeds supplied from externally. Different ingredients are used in feed production. The nutritional content of these ingredients is checked when purchased or brought to the factory. These ingredients are then stored until feed production. Storage duration and storage temperatures directly affect the freshness criteria of feed ingredient materials. Especially when high-energy ingredients with high levels of fat are stored in poor storage conditions, the fats in the ingredients are oxidized, therefore the peroxide number increases and the ingredient becomes bitter. Oxidation not only destroys the lipids in fish feeds but also vitamins. Slow growth, poor feed evaluation, color darkening, lethargy and deaths have been reported in fish fed with diets that are oxidized and inadequate in vitamin E. In this study, oxidation levels of fish feed ingredients were determined due to different storage conditions. Generally, the number of peroxides increased due to the increase in storage time and temperature, depending on the type of raw materials and oil content.

Nowadays, “energy production” and “global climate change and mitigation”, which are in direct relation with each other, are the most important environmental problems waiting for a solution. Renewable and sustainable energy sources provide the most appropriate alternatives for the solution of this problem. In Turkey, one of the important raw material potential of renewable and sustainable energy sources is “Biomass energy”; it is used in biogas production, biofuel production such as biodiesel, bioethanol, biobuthanol and gasification-burning technology. In this study; the potential for agricultural wastes derived from agricultural activities and domestic wastes from Çukurkuyu town of Niğde where the main economic source are agriculture and livestock, were calculated by using incineration technology, which is one of the methods of production of renewable electric energy. In this study, a feasibility study was carried out for the production of renewable electricity from the wastes generated in the town and the potential of renewable electricity generation was determined by the obtained data. Moreover, in this study, fossil fuel balance of the electricity produced from biomass was determined and potential for greenhouse gas emission reduction was determined. Thus, as an alternative to fossil fuels, energy production from renewable sources has been determined both in agricultural waste management.

It is well known that alternative food additives are being researched following the prohibition of the addition of antibiotics to poultry feed as growth factors. Recently, antimicrobial peptides (AMPs) have been considered as alternatives to antibiotics. AMPs, produced by bacteria, insects, amphibians and mammals, as well as by chemical synthesis. In particular, their natural antimicrobial properties and their low tendency to create resistance in micro-organisms suggest that they might be a good alternative to antibiotics. They are not only effective against bacteria, but are also known to be effective against fungi and viruses. In studies on pigs and broiler chickens, they have been shown to be beneficial effects on growth performance, nutrient digestibility, the immune system, intestinal morphology and gut microbiota. Antimicrobial peptides are small biological molecules formed from 12-60 amino acids. AMPs have been reported to kill bacteria, in particular those showing resistance to multiple antibiotics. AMPs block the development of harmful bacteria while encouraging the growth of beneficial bacteria. For instance, it has been reported that sublancin reduces the Clostridium perfringens count while increasing the numbers of Lactobacilli. Furthermore, they have been proved to have a strong effect against Staphylococcus aureus and Pseudomonas aeruginosa. Some of the AMPs used in broiler chicken feeding are sublancin, secropin, magainin, nisin and defensin. These peptides can be used by adding them to feed or to drinking water. This review has attempted to find an answer to the question of whether AMPs added to the feed of broiler chickens can be an alternative to antibiotics by examining previous studies.

In continuous monitoring and control systems as required by automation, biosensors are greatly advantageous with their precision, stability, ease of use and response rates. In this study, a new amperometric glucose sensor has been fabricated based on a composite film prepared by electrochemical polymerization of carbazole derivative with having free amino group in presence of the Keggin type polyoxometalate (POM) anion, (nBu4N)3[PW9O34(tBuSiOH)3], in order to meet the needs of the sector. The enzymatic biosensor was prepared by immobilizing the Glucose Oxidase (GOx) enzyme to the surface modified with the POM/PAAC composite. Biosensor preparation and working conditions were optimized and analytical characterizations was carried out. The amperometric response of the POM/PAAC-GOx modified electrode versus varying concentrations of glucose was studied at a potential value of −0.7 V (Ag/AgCl). When the data obtained from these surfaces can be prepared in a short time, it was determined that they are sensitive to the presence of glucose in food samples such as cola and fruit juice. One of the innovations of this study is the shortening of the response time and the easy preparation of the biosensor. In addition to high linearity, short response time and long shelf life advantages in determining the glucose content in foods, it is thought that it will be an economical alternative with its easy preparation, ease of application and time and chemicals gain in measurements.

Wheat is an essential crop throughout the world and especially in Pakistan. It has a great yield potential which can cope with the raising food challenges of the world but there is a more need to increase its yield with its increasing demand. There is a need to increase the yield by improving the genetic characters. Breeder’s intention is to find out the variability in the genetic lines and by the use of these lines they can develop the high yielding breeding lines. Multi-ovary is a novel character to increase the number of grains per spikelet. What type of gene actions control that? From this review we get that some support the single dominant gene controlled trait, some support the two recessive non-complementary genes controlled trait and some favour the both as it is controlled by both dominant and recessive genes in different tri-grain lines. Secondly there is a need to study the genetic variation for the yield contributing traits. So that we can improve our genotypes to attain high yield. How we can evaluate yield and yield components. Combining ability is a considerable tool for this. Literature revealed that additive gene action contributes more towards yield than non-additive. In this many lines also came forward as good combiners which in future we can use them for a successful wheat hybridization program.
