The Effects of Different Treatments on Phytochemical and Volatiles Compositions of ‘Hicaznar’ pomegranate Fruit During Cold Storage 全文

‘Hicaznar’ pomegranate fruits were stored under both modified atmosphere packaging (MAP) and normal atmosphere without packaging at +7oC temperature and % 85-90 RH for 18 weeks. Weight loss, % CO2/O2 gas changes, arils color changes [L (lightness) and C (chroma)] values, total soluble solids (TSS) content, pH, titratable acidity (TA), total phenolic content (mg/100mL), total flavonoid content (mg/100mL), antioxidant activity (%), malic acid (%), changes of sugar (glucose, fructose, saccarose and sorbitol) content and volatile aroma compounds of ‘Hicaznar’ pomegranate fruits were determined during cold storage. Both average weight loss of pomegranate fruits and aril L (lighness) colour value changes were increased while aril C (Chroma) colour changes was decrease slightly at the end of storage. Total phenolic content in control arils samples were determined 109.5 mg/100 mL while it was 127.8 mg/100 mL in MAP aril samples; also total flavonoid content was decreased in 26.8 (control) and 27.1 (MAP) respectively at the end of storage compared to begining. The decrease of TSS was statistically significantly different between treatments. Moreover in this study volatile profile of ‘Hicaznar’ pomegranate fruit was desribed and 27 volatile compounds identified using automatic headspace solid-phase microextraction gas chromatography -mass spectrometry (HS-SPME GC/MS) tecniques. ‘Hicaznar’ pomegranate fruits have alcohols, aldehide, alkan, acids, esters, terpene and another volatile. Both effects of storage type and duration were evaluated. The results showed that terpenes increased for both MAP and control fruit samples while alcohols, aldehide and acids were decreased for both of storage type at the end of storage.

Carrying between February 2012 and February 2013 as seasonal, the present study aims to determine heavy metal loads of five different creeks pass through Giresun city center and disembogue to Black Sea. Heavy metal analyses were performed from selected stations by ICP-MS instrument. Without seasonal and station differences, metal levels were found as follow; Cd: 0.129-5.113, Mn: 0.009-2.937, Fe: 0.007-1.985, Cu: 0.002-1.344, Zn: 0.002-1.901, Ni: 0.003-0.149, Pb: 0.009-21.22, Cr: 0.002-0.177, Co: 0.001-0.087 mg/L in water. Cd: 0.118-166.3, Pb: 5.62-398.9, Mn: 111.7-988.2, Fe: 2919-117973, Cu: 18.60-963.9, Zn: 11.09-2471, Ni: 11.29-813.1, Cr: 10.76-860.5, Co: 8.59-757.1 mg/kg in sediment. There were statistically significant differences between seasons in sea water. Statistically differences were found on Aksu, Güre, and Batlama stations. In sediment, statically differences in Cu, Zn, Ni, Co levels were found in winter season. The same elements were also statistically different on Güre station.

The purpose of this study was to evaluate the factors affecting the consumption of bee products and honey and also determine consumption habits and awareness of bee products in some selected province in Turkey. The main material of the study was formed by the original survey data which were collected from randomly selected 1112 people from Batman, Bursa, Diyarbakır, Erzincan, Kayseri, Kırşehir, Mersin, Muğla, Muş, Ordu, and Samsun as random provinces in 2014. The data in the study were examined in two parts. The first part consisted of the consumption habits and awareness of honey, whereas the preferences of individuals usage of bee product such as pollen, propolis, royal jelly and bee venom were examined in the second part. Multivariate logistic regression model was applied for each section including variables data for bee products. According to the survey, it was found that 39.6% of consumers consumed honey between 0-500 grams on a monthly basis. 51.2% of consumers bought honey from beekeepers, and 41% of them stated that they received from the market and bazaar. 5.9% of consumers believe the advertisement on television about bee product. 45.8% of consumers using honey stated that they could understand the quality of the honey. In this study, the effects of lactococcin BZ from Lactococcus lactis ssp. lactis BZ and enterocin KP from Enterococcus faecalis KP (1600 AU/mL) on the activities of three different yoghurt cultures (Y1 and Y2: CHR Hansen, Denmark; Y3: Sacco, Italy) were investigated. Lactic acid bacteria counts and pH values of the samples were determined during the incubation period (at 42°C for 24 h). It was found that lactococcin BZ had bactericidal effect against only one yoghurt culture whereas enterocin KP was effective against two yoghurt cultures. When lactococcin BZ and enterosin KP were used in combination (1:1), they showed bactericidal effect against two yoghurt cultures.

Combining ability analysis has a key position in rapeseed breeding. To estimate the combining ability effects for yield controlling traits in rapeseed, three testers and five lines were crossed using line × tester design in randomized complete block design with three replications. Mean sum of squares of analysis of variances for genotypes were significant for all of the traits; indicating the presence of significant genetic variation. All the interactions between lines and testers exhibited significant results of mean sum of squares for combining ability. Line ‘Duncled’ was found good general combiner for decreased Plant height (PH:-2.0), Days taken to 50% flowering (DF: -15.8) and Days taken to maturity (DM:-3.4) while tester ‘Punjab Sarson” for increased Number of seed/siliqua (SS: 2.2), Number of siliquae/plant (SP: 2.2) and decreased DF (-3.0) traits. Significant general and specific combining ability effects were observed. The best hybrid combination on the basis of specific combining ability effects was “Durre-NIFA × ZN-M-6” for Seed yield/plant (SY: 2.7), DF (-6.1) and DM (-3.5). PH (-0.2), Siliqua length (SL: -0.1), SS (-0.03) and SY (0.2) showed non-additive genetic effects. The half of the characters revealed additive and remaining half showed non-additive genetic effects. The present study unveiled the importance of both type of genetic effects demanding the application of integrated breeding approaches for exploiting the variability. ‘Punjab Sarson × ZN-M-6’ exposed maximum SS (30) and SP (837). Maximum SY (75.9g) and minimum DF (64) were showed by ‘Legend × Duncled’. The present research delivers valuable information of genotypes for promoting yield by means of improving yield related characters.

Pinus brutia Ten., Red pine, known to be tough drought resistant pine specie, could effectively be used for afforestation of disturbed areas. It is of great interest for the afforestation in arid zones. Appropriate seed sources for the specific areas guarantees reforestation success. Away from its native areas Pinus brutia Ten. is planted for its ornamental value and timber production purposes. Selection of drought resistant provenances can very well increase the survival success. In this study, the effects of water potential on germination were studied in fourteen provenances of Pinus brutia Ten. from Turkey. Water potentials between 0 and -8 bars were obtained using polyethylene glycol 6000 (PEG-6000) solutions. Seeds were kept for 35 day at 20 ± 0.5°C. A decrease in water potential produced a marked reduction in germination percentage and germination value. As a result, significant variations between the provenances were found. It was determined that, under a -8 bar water stress, Isparta-Bucak and Mersin-Silifke, respectively corresponding to 58% and 57% of the control group, were the least water stress affected provenances.

The present study was conducted to investigate the carcass traits of Karayaka lambs slaughtered at different slaughter weights (SWs) and to find out optimum SWs. Male Karayaka lambs with 20 kg live weight (n=30) constituted the animal material of the study. Lambs were randomly divided into five SW groups; 30 (GI; n=6), 35 (GII; n=6), 40 (GIII; n=6); 45 (GIV; n=6) and 50 (GV; n=6) kg. Lamb fattening feed (concentrate feed, ad libitum) and forage (lentil straw, 100g/lamb/day) were used as the feed material. Lambs were sent to slaughter at target SWs. Following the slaughter, non-carcass components, tailless hot and cold carcass weights were taken. Carcasses were separated into six sections as leg, foreleg, back, loin, neck and others. Physical dissection was performed to investigate carcass composition. Only the differences in carcass dressing and skin percentages of slaughter groups were not found to be significant. Increasing carcass fat percentages and decreasing carcass lean and bone percentages were observed with increasing SWs. Considering the consumer preferences, current findings revealed that Karayaka lambs should be sent to slaughter at weights between 30-35 kg. However, considering the red meat deficit of the country, current market conditions and producer preferences, the optimum SW for Karayaka lambs were recommended to be between 40-45 kg.

This research was carried out by visiting total 14 feed mills (8 of them are active, 6 of them are passive) in Diyarbakır province in order to get information on feedstuffs, production, quality, technical capacity, marketing, problems and expectations from public authority. Each feed mill were visited, data were collected by face to face interview, total 34 questions were asked and results were evaluated. According to survey results; total technical capacity of feed mills in Diyarbakır is 388.800 Ton/year, however active capacity is 230.400 Ton/year and their plant utilization is quite low (50.3%), average feed production capacity is 11.9 Ton/hour, daily production is 403 Ton. Feed industrialists primarily indicated that unconscious farmers (85.7%), higher feedstuff price (75%) and unfair competition and unregistered production (62.5%) are the most important problems in the industry. Cereals, wheat bran and cottonseed meal were obtained from South-eastern Anatolia Region, however, other feedstuffs and feed additives were bought from other regions of Turkey. Primary preferences of buying of feedstuffs are: quality of feedstufs 50%, easily obtaining 31%, cheap 19% for feedstuffs. Manufactured feeds were marketed by as follows; 34% distributers, 33% distributors and in factory, 22% directly to farmer and 11% in other ways. As a result, technical facilities were found adequate, feed mill owners are conscious to establish laboratory, they have enough production capacity but, except one of them, they produce only one shift in a day.

An experiment was conducted to determine the effect of different combination calcium sources and particle size on performance and egg shell quality in layer hens. In the experiment, 198 brown laying hens at 44 week of age were randomly assigned into 11 treatments groups. The experimental diets consisted of different calcium sources (Fine limestone, large limestone, large oyster shell and large egg shell) and their different combination. The experimental unit consisted of a groups of three hens, thus each treatment was replicated six times. Different calcium sources and particle size addition to the laying hens diet had no significantly effect on body weight gain, egg production, egg mass, feed intake, feed conversion ratio, egg specific gravity, egg shell weight, egg shell thickness and egg shell breaking strength but egg weight had significantly affected by the treatments. The significantly highest egg weight was found in laying hens fed with 50 % fine limestone and 50 % large limestone. Dietary different Ca sources had a significant effect on Ca, P and Mg as mineral contents of eggshell and tibia. In the present study, when dietary large calcium sources (limestone, oyster shell and egg shell) had no effect on performance and eggshell quality parameters in laying hens. However, dietary containing at least 50 % large calcium sources had positive effect on mineral contents of tibia.

In spite of a negative judgements among consumers about meat and meat products, in human nutrition meat and meat products are important for nutrient components which they contain essential nutrients. Intensively produced fermented meat product such as sucuk in our country and lactic acid bacteria (LAB) are used for production of various fermented sausages all over the world. LAB primarily used in order to increase the food safety of such products. LAB with probiotic properties have effect on product taste, flavour and aroma as well as the positive effects on functional and physiological properties. Positive effects of probiotics in human health and product properties in the absence of any adverse effects various cultures have been used for the production of probiotic fermented meat products. In the production of such products prepared dough which have meat and fat in the matrix form a suitable vehicle for probiotic cells. During production of products formation of lactic acid reduced the pH, during ripening conditions water activity reduced so these factors adversely affect viability of probiotic cells. For this reason protecting probiotic cultures from negative effects during exposure in the product and vitality of cells in human gastro-intestinal system to continue operating for consumption to be provided during the order process the cells are coated with microencapsuation. The use of probiotic microorganisms isolated from various foods is being investigated for the production of sausages. Studies on the effects of probiotics on human health of meat products are also needed. In this study the probiotic microorganisms used in the production of probiotic fermented sausages were investigated.
