Sürdürülebilir Biyoaktif Peptit Kaynakları: Gıda İşleme Yan Ürünleri ve Atıkları 全文

Gıda endüstrisi tarafından üretilen atıklar ve yan ürünler protein açısından zengin kaynaklardır ve protein hidrolizatlarından biyoaktiviteye sahip bileşikler üretmek için yeni strateji arayışında önemli bir alternatiftir. Çeşitli çalışmalar gıda işleme endüstrilerinden elde edilen yan ürün ve atıkların, çeşitli rahatsızlıkların tedavisinde önemli bir uygulamaya sahip olan potansiyel biyoaktif bileşik kaynağı olarak kullanılabileceğini göstermiştir. Proteinlerde şifrelenmiş belli sayıdaki aminoasitten oluşan küçük fraksiyonlar olarak tanımlanan biyoaktif peptitlerin bu hastalıkları önlemede veya tedavi etmede sentetik ilaçlara doğal, güvenli ve uygun maliyetli alternatif olmada potansiyeli yüksektir. Yan ürün ve atıklar nispeten ucuz protein kaynaklarıdır, bu nedenle biyoaktif peptitlerin üretimi için kullanılmaları sadece üretim maliyetlerinin düşmesine neden olmakla kalmayıp katma değeri yüksek besinsel yan ürünlerin geliştirilmesi için de oldukça önemlidir. Bu uygulama aynı zamanda atık bertarafı ile ilgili sorunun azaltılmasına da katkı sunmaktadır. Bu kapsamda bu çalışmada, biyoaktif peptit üretiminde değerlendirilebilecek çeşitli gıda işleme yan ürünü ve atıkları, bu ürünlerden protein hidrolizatı elde etme süreçleri ve bu peptitlerin sağlığa yönelik etkilerini inceleyen güncel çalışmaların derlenmesi amaçlanmıştır.

Exposure to bisphenol A (BP), an environmental pollutant, is potentially harmful to both human health and the environment. The purpose of the current research was to evaluate the effectiveness of β-caryophyllene (CF) (200 mg/kg) on rat cerebellar tissues exposed to BP (250 mg/kg). Thirty-five randomly selected male rats were split into five groups as: control (CON), olive oil (OL), BP, CF, and CF+BP. On day 15 of the experiment, all rats' cerebellar tissues were immediately extracted, followed by stereological and histological examination. Our results revealed that MDA level was significantly elevated in the BP group compared to the CON group (p<0.05). While no significant difference was detected in the mean cerebellar volume among the experimental groups, the BP group’s the Purkinje cell number was significantly reduced when compared to the CON group (p<0.05). In the CF+BP group, we found a significantly lower level of MDA and higher number of Purkinje cells compared to the BP group (p<0.05). Histopathological examination revealed that the BP group had the marked neuronal deterioration; however, in the CF+BP group, this structural alteration was not as severe than the BP group. Our findings showed that exposure to BP caused oxidative damage to cerebellar tissues, and administration of CF attenuated BP-induced toxicity via improvement of oxidative stress.

This study was conducted in 2017 under greenhouse conditions using selected four different potato clones to determine the effects of different doses of GA3 and arbuscular mycorrhizal fungus on mini tuber production. The research, carried out in a randomized complete block design with three replications, applied GA3 doses of 0, 5, 10, and 15 ppm, and mycorrhizal inoculat doses of 0, 500, 1250, and 2000 mg/100 tubers. Parameters including emergence time, plant height, main stem number, tuber number, average tuber weight, tuber size distribution (>45 mm, 28-45 mm, <28 mm), and maturity period were examined. The effect of GA3 application on all investigated parameters except the number of main stems was significant, statistically. The highest mini tuber number (9.1 tubers) and mini tuber yield (408.4 g/pot) were obtained from the application of 15 ppm GA3, while the highest average mini tuber weight (46.74 g) was obtained from the control group. In mycorrhizal applications, the highest tuber number was obtained at a dose of 500 mg/100 tubers, and the highest mini tuber weight and yield were obtained at a dose of 1250 mg/100 tubers. As a result of the study, it was determined that the application of 15 ppm GA3 is suitable due to its positive effect on mini tuber multiplication, and the mycorrhizal application at a dose of 500 mg/100 tubers is appropriate due to its positive effect on increase of tuber number.

To increase yield and quality in agricultural production, it is necessary to perform management against diseases and pests. Alternaria, which causes several diseases in many economically important plants, is the most common species and widely distributed in nature. One of the important species reported in sweet cherry in recent years is Alternaria alternata. Many studies have emphasized the necessity of effective control with Alternaria species and examined the use of environmentally friendly methods against fungal diseases. In recent years, the use of plant extracts has increased due to their antimicrobial properties. Antifungal effects of Datura stramonium L., Vitex agnus-castus L., Xanthium strumarium L., Capsella bursa-pastoris L., Convolvulus arvensis L., Viscum album L., Echinophora tenuifolia L. subsp. sibthorpiana (Guss.) Tutin, Amaranthus retroflexus L., Chenopodium album L., Tribulus terrestris L., Solanum nigrum L., Nerium oleander L., Circium arvense (L.) Scop. and Brassica oleracea L. aqueous extracts were determined against Alternaria alternata. At the end of the 7-day incubation period, the mycelial growth of the fungi was measured and the antifungal effect of plant extracts was determined. As a result, the extracts were determined to inhibit mycelial growth compared to control. The plant water extracts used in the study were determined to inhibit the mycelial development of the pathogen by 20.20% to 77.12%. It is considered that different solvents and concentrations should be addressed to guide further studies. It was also concluded that potential plant species that may show anti-fungal properties should be evaluated.

This study compared the accuracy of various soil phosphorus assessment methods to measure the soil's ability to supply plants with phosphorus over a brief period in the field. Twenty individual soil samples were collected from a standing wheat (Triticum aestivum L) crop at depths ranging from zero to twenty centimeters. An equivalent plant spike sample was also procured from the soil sampling fields. In comparison to the wet acid digestion method used to detect phosphorus in plants, several methods were utilized to assess phosphorus in the soil, including resin extractable phosphorus, AB-DTPA extractable phosphorus, NaHCO3 extractable phosphorus, water-soluble phosphorus in suspension, and paste. The levels of variation and deficiency of phosphorus, which were found by different methods followed different patterns as shown by the fact that, AB-DTPA method finds phosphorus deficiency in 20% of samples while on the other hand, Olsen method finds phosphorus deficiency in 80% of samples. Even with such a small sampling area, none of the procedures showed a significant correlation with any other method that might account for uneven variation among the samples when determined by distinct procedures. However, corrections were observed to a certain degree between ammonium bicarbonate-diethylenetriaminepentaacetic acid (AB-DTPA) extractable and resin, as well as between other procedures and the plant P scale. Both resin and ammonium bicarbonate-diethylenetriaminepentaacetic acid (AB-DTPA) had a strong relationship with plant phosphorus, with the former showing a significant correlation of 0.48 and 0.21, respectively. Hence Resin and AB-DTPA methods are recommended for the determination of phosphorus under certain soil and plant conditions.

Bu çalışmada üç farklı konsantrasyonda iki farklı gıda koruyucusu [askorbik asit (100, 250, 500 ppm) ve potasyum sorbat (1500, 2000, 3000 ppm)] ve yenilebilir kaplama kullanılarak hazırlanan kaymakların çeşitli özellikleri incelenmiştir. Araştırmanın 1., 7., 14. ve 21. günlerinde kaymakların kimyasal, mikrobiyolojik ve duyusal analizleri yapılmıştır. Yapılan kimyasal analizlerde pH, titrasyon asitliği ve yağ analizlerinin ortalama sonuçları sırasıyla %5,99, %0,05 ve %65,3, peroksit ve TBA analizlerinin sonuçları ise 1,75 meq O2 / kg ve 0,14 mg malonaldehit/kg yağ olarak bulunmuştur. Mikrobiyolojik analizlerde ise TMAB, toplam maya-küf, lipolitik bakteri sayılarının ortalama sonuçları sırasıyla 2,30, 1,83 ve 2,35 log kob/g olarak belirlenmiştir. Duyusal değerlendirmede 6 panelistin görüşleri sonucunda tespit edilmiş olup görünüş, renk, koku, tat-aroma, kıvam ve genel kabul edilebilirlik kriterlerinin ortalama sonuçları sırasıyla 8,36, 8,06, 7,65, 7,46, 8,86 ve 7,86 olarak bulunmuş ve değerlendirme sonucunda kaymak örnekleri çok iyi ve mükemmel değerler almıştır. Yapılan bu çalışma ile elde edilen sonuçlar doğrultusunda kaymağın raf ömrünün duyusal kriterlerini koruyarak uzatıldığı belirlenmiştir.

Alfa S1 kazein (CSN1S1) ve CKLF benzeri MARVEL transmembran alanı içeren protein 2 (CMTM2) gen bölgelerinde meydana gelen insersiyon ve delesyon (InDel) gibi varyasyonlar keçilerde bir batında doğan yavru sayısını etkileyebilmektedir. Bu çalışmada ilk defa Kıl (KIL, 66 örnek), Honamlı (HNM, 74 örnek) ve Kabakulak (KBK, 70 örnek) keçilerinde CSN1S1 ve CMTM2 genlerindeki InDel varyasyonların belirlenmesi için toplam 210 hayvan Polimeraz Zincir Reaksiyonu (PZR) yöntemiyle genotiplendirilmiştir. Her iki gen bakımından tüm keçi populasyonlarının polimorfik bulunduğu çalışmada CSN1S1 geninde bir batında doğan yavru sayısı için avantaj sağlayan genotip (II) frekansı 0,10 (KBK) ile 0,12 (HNM ve KIL) aralığında değişmiştir. CSN1S1 geni için en düşük ve en yüksek gözlenen heterozigotluk (H0) değeri sırasıyla KBK (0,53) ve KIL (0,65) keçilerinde tespit edilmiştir. CMTM2 geni için II genotip frekansı 0,09 (KIL) ile 0,29 (KBK) aralığında değişirken, HO değerinin 0,415 (KIL) ile 0,585 (KBK) aralığında değiştiği belirlenmiştir. Çalışılan her iki gen bölgesi içinde tüm populasyonların Hardy-Weinberg dengesinde olduğu tespit edilmiştir. Çalışmadan elde edilen sonuçlar HNM, KIL ve KBK keçilerinde CSN1S1 ve CMTM2 genleri için istenilen genotip olan II’nın değişen frekanslarda olduğunu ve yeterli genetik varyasyonun bulunduğunu göstermektedir. Bu nedenleCSN1S1 ve CMTM2 gen bölgelerindeki varyasyonların çalışılan yerli keçi ırklarında bir batında doğan yavru sayısının artırılması için yapılacak Marker Destekli Seleksiyon (MDS) çalışmalarında kullanılabileceği düşünülmektedir

Potatoes for use in industrial processing must have a low reducing sugar concentration. This study investigates the impact of organic and synthetic fertilizers on the composition of Irish potato cultivars’ reducing sugar, specific gravity, dry matter, and starch. The research was conducted at Busogo Farm in Rwanda, using randomized complete block designs in seasons 2021 B and 2022 A with rate of ten tones per hectare under the doses of 100%, 50%, and 0% and three hundred kilograms per hector under the dose of 100%, 50% and 0% respectively for farmyard manure and NPK 17.17.17. Results showed significant effects of season and treatment on reducing sugar levels in potatoes. Twihaze and Kirundo varieties recorded high glucose (0.09%), while Gisubizo variety in control, recorded low glucose (0.01%). Additionally, the analysis of variance showed that Irish potato varieties with low to moderate and moderate to high glucose contents, respectively, experienced extremely significant (p 0.001) effects of farmyard manure and NPK on glucose content for the seasons 2021 B and 2022 A. The application of inorganic and organic fertilizers had a significant impact (p 0.05) on dry matter in seasons B and A, according to the analysis of variance. Additionally, the results demonstrated extremely significant (p<0.01) differences in specific gravity and starch in both seasons, with Kinigi variety having higher values of dry matter, specific gravity, and starch content in season B and A, respectively, of 24.58, 1.10, and 18.59%. Season 2022 A’s high decreasing sugar levels were caused by meteorological conditions brought on by the soil’s high moisture content as well as the maturity of the tubers. Due to its low level of reducing sugar, Gikungu, Kirundo, and Kinigi are excellent for chips whereas Twihaze variety is advised for boiling cooking methods.

Strawberry (Fragaria × ananassa Duch.) is one of the most widely consumed and cultivated fruits worldwide. Sorbitol plays a role in plant responses to many biotic and abiotic stresses. In this research, we intended to understand the effect of sorbitol spraying on the bioactive compounds of strawberry leaves. The application of sorbitol at different concentrations (0, 25, 50 mM and 75 mM) greatly improved strawberry characteristics such as total chlorophyll, chlorophyll a and b, carotenoids, and total phenolics. As sorbitol concentrations increased, chlorophyll a and chlorophyll b values increased in the samples taken during the fruiting period and higher values were obtained. The carotenoid content increased by approximately 189.49% and the total phenolic content increased by 30.85% in strawberry plants treated with sorbitol compared with the control. Supply of sorbitol decreased flavonoid content. The results indicate that sorbitol treatment has no inhibitory influence on the overall growth of strawberries. Among the biochemical parameters analyzed, chlorophyll, phenolic, and carotenoid contents increased, whereas flavonoid content decreased with sorbitol application.

This study was conducted to determine the effect of rearing quails in different rearing systems on egg production, egg quality characteristics, and incubation results. The 360 quails were distributed equally to 3 different rearing groups (cage, enriched cage, and floor) in a male:female mixed at the age of 3 weeks. The eggs were individually weighed and recorded one by one daily (5487 eggs) for 3 months. To determine egg quality and incubation characteristics, 750 eggs were broken, and 3284 eggs were incubated, respectively. The results showed that female quail in the floor group have lower body weight at 6 weeks old (177.19 g), and they reached sexual maturity (age of first egg laying) later (65.36 day, P<0.01), The lowest egg production (61.14%) occurred in the floor group during the 3-month egg production period (P<0.05). The lowest average egg weight (9.07 g) was determined in the floor group (P<0.05). It was determined that the eggs of quails raised in the enriched group had a rounder shape index because they have larger widths (P<0.01). While the highest average yolk height (11.24 mm) was determined in the enriched cage group (P<0.01), the highest averages of albumen length (72.41 mm) and lowest averages of yolk index (48.43%) were determined in the cage group (P<0.01). The lowest average values (113.17) in Haugh unit were detected in the floor group (P<0.05). The highest fertility rate (98.44%) was in Floor♂:Cage♀, the highest hatchability of fertile egg rate (94.67%) was obtained from Enriched♂:Cage♀, and the highest hatchability (89.10%) was obtained from Floor♂:Cage♀ pairing (P<0.05). The lowest fertility rate (88.00%) was obtained from the Enriched♂:Floor♀, the lowest hatchability of fertile egg rate (86.01%) was obtained from the Enriched♂:Enriched♀, and the lowest hatchability (75.62%) was obtained from the Enriched♂: Enriched♀ groups. As a result, it has been revealed that the effect of various rearing systems is different on egg production, egg quality traits, and hatching results in quails. Thus, it has been shown that different programs at the rearing period to be applied to the male and female quails can achieve better incubation results and reproductive success.
