Assessment of Nutrient Contents of Modified Finger Millet (Eleusine coracana) Starch 全文

Modification processes can change the physicochemical and structural properties of native starch, thereby increasing its industrial applications. Finger millet starch (FMS) was modified with casava starch (CS), guar gum (GG) and xanthan gum (XG) modifiers at the ratios of 95:5%, 90:10%, 80:20% and 75: 25%, for each of the modifier. The proximate and mineral compositions of the modified starch were determined using standard methods. Atomic absorption spectrometry method was used to quantify the mineral contents of the modified starch. Proximate contents of the modified FMS starch varied according to the type of the modifier and FMS/modifier ratios. Concentrations of carbohydrate in CS (66.97±0.03%), GG (64.42±0.05%) and XG (64.64 ± 0.01%) FMS modified starches were highest at 10%, 25% and 5% of the modifier contents repectively. The highest levels of fat in GG (8.91±0.02%), XG (7.89±0.01) and ash (3.55±0.02%) in CS modified starches were recorded when the quantity of the modifiers were increased to 25%. Fatty acid levels in the modified starches varied in the order of XG (7.74±0.03%) at 20% > GG (7.13±0.02%) at 25% > CS (5.14±0.20%) at 10%. At 25% modifier contents, levels of mineral element were highest in the modified CS and GG starches. Modifications decreased Mg, Mn, Fe, Zn, and Cu contents, while the concentrations Na, K, Ca and P increased. The modified starches can be used for production of some foods for specific health purposes.

In this study, economic structure and problems of trout enterprise were analysed in Fethiye district. It was aimed to determine the input of enterprises engaged in aquaculture at the Fethiye district, calculation of the economic situation, investigation of the market situation and determine problems. In addition possible solutions were tried to be to problems. In the district, it was interviewed with 17 trout enterprises. Data were collected with interviewing face to face by questionnaires. These data was analysed by MS Excel and SPSS programmes. 52.9% of the enterprises were established in the foothill, 35.3% were in open field and 11.8% were established in between valleys. 58.8% of these enterprises were individual enterprises, %17.6 was simple partnership and 23.5% were commercial partnership. The most shares in the active capital were constituted working capital with a rate of 70.3% whereas the share of landlord’s capital was 29.7%. The share of own capital in passive capital was 93.9% and the usage of foreign capital was low (6.1%). The share of variable cost was 83.6% while fixed cost was 16.4% in the total production cost. The main problem of enterprises was the rise of feed costs. A feed cost was found to constitute 63.4% of total production costs. Producers should be given support in terms of technical knowledge and efforts to raise awareness of local people and consumers should be made.

There are various food-processing technologies with the aim of protecting foodstuffs from environmental factors and increasing their shelf life. One of these is encapsulation technology, which has recently been used with an increased interest. With the fluidized bed coating, which is one of the physical methods used for encapsulation, the solid core materials are fluidized via the air stream and a film layer is formed on the surface of the core material with the coating material. The applicability of the fluid bed coating technique, as well as particulate properties, is significantly influenced by process variables used in the system, environmental variables and thermodynamic factors. The release characteristics of capsules formed during the process can be changed by various mechanisms such as heating, dissolution, mechanical or chemical fracture etc. and controlled release can be achieved. The fluidized bed coating method not only has the advantage of controlled release but also provides a homogeneous powder product, reduction of fine particles, development of transport and storage facilities, protection of reactive components, and prevention unwanted taste and odour. In this study, researches on fluid bed coating mechanism, fluid bed coating systems and applications of fluid bed systems in the food industry have been reviewed.

Crop production in West Africa is mostly dependent upon rainfed agriculture. Irrigation is a vital need due to uneven distribution of rainfall and seasonality of water resources. However, management and sustainability of irrigation are under risk due to notably weak database, excessive cost, unappropriate soil or land use, environmental problems and extreme pessimism in some quarters since rainfed agriculture is seen as potentially able to support the present population. This paper focuses on modernized irrigation technologies and systems that utilize less water. Information about irrigation systems in Ghana and Liberia were gathered through: 1) Irrigation development authorities in both countries, by reviewing past literatures, online publications, reports and files about irrigation in West Africa, specifically Ghana and Liberia; 2) International Food Policy Research Institute (IFPRI); 3) Collation of information, reports and data from Ghana Irrigation Development Authority (GIDA) and 4) International Water Management Institute (IWMI). The result shows that both countries have higher irrigation potential. However, the areas developed for irrigation is still a small portion as compare to the total land available for irrigation. On the other hand, as seen in the result, Liberia as compare to Ghana has even low level of irrigation development.

Çalışmanın amacı, Erzurum’da ikamet eden tüketicilerin menşe işaretli Karnavas Dut Pekmezi tüketim tercihleri ve satın alma modellerini etkileyen temel faktörlere dayalı bütünsel pazarlama stratejilerini belirlemektir. Çalışmanın ana materyali, Erzurum ilinde ikamet eden ve Karnavas Dut Pekmezi tüketen 401 hane halkı ile yapılan anket çalışmasından elde edilen birincil verilerden oluşmaktadır. Elde edilen verileri dikkate alarak; satın alma kararı üzerinde etkili olan ana faktörlerin belirlenmesinde Temel Bileşenler Analizi (PCA) ve tüketicilerin tüketim sıklıklarına göre grupların oluşturulmasında İki Aşamalı Kümeleme Analizi kullanılmıştır. Araştırma sonuçları; Karnavas Dut Pekmezi’ni yoğun ve ılımlı düzeyde tüketen kullanıcılar sırasıyla doğrudan pazarlama yaklaşımları altında kırsal kalkınmaya katkı sağlamak için menşe etiketli bütünsel kalite ve geleneksel üretim metotlarından sağlanan duyusal kalite niteliklerini dikkate alan yerel markalı genişletilmiş ve gerçek mamul imajlarının perakende seviyesinde konumlandırılmasının gerekliliğine işaret etmişlerdir. Diğer taraftan düşük düzeyde kullanıcılar ise, geleneksel üretim metotları ve hedonik kalite yaklaşımını uygulayan yerel markalı gerçek mamul imajları altında mamullerin konumlandırılması ve tutundurma karması ile yayılım etkisinin artacağı üzerine odaklanmışlardır. Bu yüzden her bir segmentteki kullanıcıların ihtiyaç ve istekleri dikkate alınarak, onların fayda beklentileri ile mamul imajlarına göre konumlandırma ve tutundurma stratejileri uygulanabilir.

Karabuğdayda olgunlaşma alt dallardan başlar, yukarıya doğru devam eder ve hasat döneminde bitki üzerinde çiçekler, yeşil ve kahverengi taneler aynı anda bulunabilir. Bu yüzden homojen bir olgunlaşma olmaz ve verim düşer. Bu çalışma karabuğdayda tane verimi ve tanede mineral besin içeriğindeki değişime bitki morfolojisinin (ana gövde-dal, orta dallar ve alt dallar) etkisini araştırmak amacıyla yürütülmüştür. Tarla denemesi 2014 ve 2015 yıllarında Isparta koşullarında tesadüf blokları deneme desenine göre üç tekerrürlü olarak kurulmuş ve Aktaş karabuğday çeşidi kullanılmıştır. Karabuğdayın ana dal, orta ve alt dallardaki tane verimi ve bunların verime katkısı her iki yılda da istatistiksel olarak önemli olmuştur. Bitki morfolojisine göre, 2014 ve 2015 yıllarında sırasıyla en yüksek tane verimi 1,548 ve 1,579 g/bitki ve tek bitki verimine en yüksek katkı sırasıyla, %40,72 ve %38,61 alt dallarda belirlenmiştir. En düşük değerler ise ana gövdeden elde edilmiştir. Karabuğdayda uygun hasat zamanı olarak verime katkısı en fazla olan alt ve orta dallardaki taneler tamamen olgunlaştığı (kahverengi tohumlar) dönem önerilebilir. Karabuğdayın mineral besin içeriği bitki morfolojisine göre değişmiş ve genel olarak K ve Mn dışında en yüksek değerler ana dalda belirlenmiştir.

The difficulty of sex determination in most poultry species causes significant financial losses for poultry production as birds cannot be separated at early stages of growth for meat or egg production. Therefore it is important to determine bird’s sex with zoometric parameters. This study was carried out to determine the sex of Japanese quails with zoometric measurements, such as live weight, body length, chest depth and chest width. Eighty-eight male and female Japanese quail chicks were used individually for live weight, chest depth (mm), chest width (mm) and body length (mm) with using digital scaled balance and caliper for every week over a period of six weeks. The weekly collected data were applied to t test for estimating the sex discrimination. The Pearson’s correlation was applied for examining the interrelationship between sex and biometric traits. The results indicated that there was a significant positive correlation between live weight and body length beginning with the 2nd week. Therefore, zoometric measurement of these body traits is suitable for discriminating the sex of Japanese quails in early phase of life.

Asma yaprak kıvırcıklık (grapevine leafroll) hastalığı geçmişten bu yana bağ virüs hastalıkları içerisinde ekonomik önem derecesi yüksek olan dünya çapında yayılım gösteren bir hastalıktır. Closterovirus cinsine ait virüs üyeleri içerisinde, Asma yaprak kıvırcıklık virüsü 1 (Grapevine leafroll-associated virus 1) (GLRaV-1) en eski olanıdır. Bağlarda önemli verim kayıplarına neden olan bu virüs, özellikle yapraklarda kıvrılma simptomu ile tanımlanır. Nar bitkisi, ekonomik değeri yüksek bitkiler arasında yer almakta olup henüz az sayıda virüs hastalıkları tanımlanmış ancak son yıllarda yürütülen çalışmalarda bu bitkinin de GLRaV-1’in konukçusu olabileceği bildirilmiştir. Bu çalışmanın amacı, bağ ve narlardan elde edilen GLRaV-1 izolatlarının genomik olarak kıyaslanmasıdır. Bu amaçla, 2014 yılında Hatay ve Niğde illerinden toplanan asma ve nar örneklerinden total RNA ve dsRNA izolasyonları yapılmış, virüs genomuna özgü 2 farklı bölgenin (hareket (movement) proteini (p24) ve ısı şok (heatshock) proteinini (HSP70h) çoğaltan primerler kullanılarak RT-PCR ile analizleri yapılmış elde edilen ürünler klonlanmış ve sekans analizleri yapılmıştır. Ayrıca Closterovirüs’ün HSP70h genine özgü dejenere primer kullanılarak DOP-PCR analizleri yapılmıştır. DNA dizi analizlerinin sonunda elde edilen kısmi genomun, BLAST analizleri yapıldıktan sonra filogenetik analizleri yapılmıştır. Bu çalışma sonunda, yeni bir konukçu olduğu düşünülen nardan izole edilen GLRaV-1 izolatlarının asma izolatları ile kıyaslamalı olarak analiz edilmesi sağlanmış ve izolatlar arası yüksek oranda benzerlik olduğu tespit edilmiştir.

Shiga-like toxin producing Escherichia coli is still an important public issue which causes extremely dangerous health problems. This study was planned in order to examine the inhibitory effect of Modified Atmosphere Packaging application on E. coli O157 and O157: H7. The purposes of the present study were to detect E. coli O157 and O157: H7 strains from ground and cubed beef. A total of 100 MAP cattle meat products (50 minced meat, 50 meat cubes) were collected from the markets and butchers in Samsun province between May and October 2013. According to results, 1(1/50-2%) E. coli O157 and 1(1/50-2%) E. coli O157: H7 strains isolated from 50 ground beef samples, while 1 (1/50-2%) E. coli O157 strain was identified from 50 cubed beef samples. It was determined that E. coli O157 isolate obtained from the MAP ground beef carried stx1, stx2 genes; E. coli O157: H7 isolate carried stx1, stx2, eaeA and hylA genes while E. coli O157 isolate obtained from the MAP cubed meat only carried the stx2 gene. In antibiogram test, both E. coli O157 isolates were resistant to streptomycin and one E. coli O157: H7 isolate was resistant to streptomycin, cephalothin and tetracycline. As a consequence; in order to protect public health, products should be kept in proper hygienic and technical conditions during sale and storage and use of uncontrolled antibiotics should be avoided.

Meat is one of the main nutrition source in the human diet with its excellent protein, vitamin and mineral contents. Despite its advantages, being high-priced makes meat products open to adulteration. Meat products are mixed food types which can contain different species of meat. However, mixing two or more types of meats is not always allowed by laws. On the other hand, replacement high quality meats with cheaper meat types are a cost lowering way for the producers. The commonly consumed meat types differ from country to country, but generally economical, ethnic and religion concerns are in the foreground. In this case, species identification techniques are gaining importance. Although some techniques depending on DNA or spectroscopy have been developed for many years, choosing the best method for species identification is still among the controversial issues today. Thus, the currently used methods and promising techniques in this area were discussed in this review.
