The carotenoid pigments are responsible of the colour in the fruits of the Capsicum genus. In this paper a compilation of the studies carried out of the different factors that have influence on the stability of these pigments on such fruits is done. It is also included the existing methods for the colour measurement so as superficial as extractive, as well as the different technics used for the separation of the carotenoids in the pepper, their isolement and quantitative determination, and identification ways
