Influence of chosen preservatives on changes of fish lipids of residuary raw materials during frozen storage

Residuary raw materials of Baltic herrings has been stored at the temperature of -25 degrees C with a dashing of chemical compounds such as: skwalen, skwalen with citric acid, sodium nitrate, sodium nitrate with citric acid, acetylsalicylic acid. The activity of dashings on restraining of hydrolysis and oxidation processes and on carotenoid changes has been specified. The influence of the applicated preservatives on the lipid extractivity in terms of frozen storage time has been specified, too
