Seed lipids from the various sorts of black red currant

Qualitative and quantitative composition of seed lipids from several sorts of black and red currant was determined. Currant seed contained 10-23 of oils, dependent on species and sort. The content of unsaponifiable matter in examined oils was high (1.5-4.7). The main fatty acids in analysed oils were polyunsaturated fatty acids, linoleic (41-50) and alfa-linolenic acid (12-30). Seed lipids from black currant contained more gamma-linolenic acid (about 19) and less alfa-linolenic acid than the lipids from red currant. The main sterol in the lipids of red currant seed was beta-sitosterol (70 of all sterols).
