Processing and storage study on wild sunflower honey from the Philippine highlands

The initial processing study involved a simple water-bath pasteurization process using heat penetration data. The parameters used for the quality measurement of the heated products were percent hydroxymethyl furfural (HMF) and moisture content, pH, diastase number and microbial counts (yeasts and molds). There were no significant differences between raw and heated sunflower honeys with the parameters mentioned using the pasteurization process combination of 25 minutes and 70 deg C, in both the laboratory scale and bench scale production processes
