Food safety - a challenge to implement HACCP system in Estonian food industry

A brief overview of the current situation in the food industry of Estonia is presented. To ensure, food safety and its quality control through routine laboratory analyses the establishment of the HACCP system is discussed. The attention is focussed on the implementation of HACCP system in food industry emphasizing the role of laboratories and the food control system as a whole. The necessity of training the whole staff of a company is stated.
