Producing slaughter pigs heterozygous at RYR 1 locus may result in deficiencies in meat quality (PSE). The acid meat gene (RN-) causes a large increase in glycogen and a decrease in protein content of white muscle. The measurement of muscle glycolytic potential (glycogen) on the live animal could discriminate carriers and non-carriers of the RN- gene and could be used for screening of breeds. Metabolic exhaustion can be assessed in bulls by measuring its muscle glycogen concentration before or as soon as they are slaughtered and DFD meat quality could be predicted
