Cell suspension cultures of carrot (Daucus carota L. cv. Kalisto) were permeabilized with Tween 20, Tween 80, 30% ethanol, 50% ethanol, and hexadecyltrimethylammonium bromide and immobilized with glutaraldehyde. Invertase of cell suspension culture and of immobilized cells showed its activity optimum at pH 4.5 and temperature 53 deg C. Enzyme hydrolysis was linear within 4 h, reaching 66% conversion. The immobilized cells are characterised by a high invertase activity and showed convenient mechanical properties
