Discolouration of salted porcine small intestines

A finding of black areas in salted porcine small intestines intended for use as sausage casings is described. No specific microbial agent was identified. The apparent cause of the discoloration was local hyperaemia due to slaughtering of fatigued, or even exhausted pigs, or to incomplete bleeding. Histochemical examination demonstrated the presence of iron ions in the discoloured areas. Such intestines must not be used as sausage casings in meat processing.
