Food allergies have become more and more a matter of concern throughout the last few years, due to the steep increase in their prevalence, the role of new food technologies and the interest for food-related risk analysis in selected groups of consumers. The AA highlight the scientific state-of-the-art regarding allergies related to consumption of food of animal origin, as well as European law currently in force on food labelling and consumer information

Gli AA puntualizzano lo stato delle conoscenze scientifiche sul determinismo dei fenomeni allergici legati al consumo di alimenti di origine animale e la legislazione attualmente in vigore ai fini della prevenzione del rischio e l'informazione del consumatore
