Since the White Book has been issued by the European Commission back in 2000, the role of risk analysis as a basis for food safety has been increasingly underlined, so as to become a common word for scientific and even politic circles. The AA take into account the components of risk analysis and their interactions, in order to have a clearer view of the various definitions and concepts. The role of EFSA, both as an assessment and as a communication-oriented structure, is also examined
