Antilisterial property of Leuconostoc mesenteroides E131 strain isolated from traditional fermented sausage

Leuconostic mesenteroides E131 originating from fermented sausages produces bacteriocine (mesenterocine) featured with significant antilisterial effect. Its mode (stregth) of action towards Listeria monocytogenes has been determined. At the same time the influence of moderate to high temperatures and proteolytic enzymes to its activity has also been determined. Considering the determined properties, isolated bacteriocine can find its application in meat industry as the supplement in the aim of achievement of products health safety.
