Recovery of anatomical normality in gilthead sea bream (Sparus aurata, L. 1758) with opercular anomalies

إنجليزي. Opercular anomalies are frequently observed in gilthead seabream. Even if they're not serious, these malformations negatively affect the productive performance, as well as the image of the product and its market value. It's demonstrated that the opercular anomalies are reversible, improving the market image of final product. The recovery level from defective opercular complex has been evaluated by mean of IRi index, using image processing. The single opercular bones and branchiostegal rays, coming from controlled boiling, underwent to morphological and morphometric analyses. The results well established the recovery of the opercular anomalies in gilthead seabream
