Presumption of the fish fat content by specific gravity measurement was examined. This time, Japanese horse mackerel (Trachurus japonicus) and chub mackerel (Scomber japonicus) ware used for the sample. As the result, specific gravity measurement could use for the fat content presumption of each fish stock, if they were in the state of dress or fillet. The case of fillet was more correct than dress.
