As compared with result obtained in the control variant, the technology of storage in a micro malting house with an increased level of ethylene (200 to 300 nL/L) in exchanged air had a statistically significant positive effect on values of malt extract yield, relative extract at 45 deg C, degree of attenuation, diastatic power, Kolbach index, content of beta-glucans in malt, malt homogeneity and malt modification.
