One of the simplest ways for school food service operations to expand into the catering business is by offering a dessert buffet. Key considerations in planning a successful catered dessert buffet are outlined. An ice cream social event and "make-your-own-sundae" are popular themes for spring or summer dessert buffets. "Harvest" dessert buffets, featuring a variety of pumpkin items, are a creative way to celebrate autumn. Another popular type of dessert bar is one that offers numerous variations of a single type of dessert. Guidelines are provided for setting up and organizing buffets around each of these themes; suggestions for foods, toppings, beverages, and garnishes one might serve are also presented.
