Formation of nitrosamines is enhanced by the presence of thiocyanate and iodide ions, which are found in saliva, gastric juices, and foods. In increasingly higher physiological concentrations the catalytic effect of thiocyanate and iodide ions increased the rate of N-methyl-N-nitrosaniline formation remarkably and the cumulative effect was even higher.
