Антиоксидантная активность инокулированной питательной среды в зависимости от концентрации введенного глицина | Antioxidant activity of inoculated cultured medium depending on glycine concentraition

The antioxidant activity of an inoculated nutrient medium based on hydrolyzed milk, growth factors, glycine and a starter culture containing symbiotic strains of Lactobacillus acidophilus, L. bulgaricus, L. plantarum, Saccharomyces lactis was studied. A direct relationship between the antioxidant activity of the medium and the concentration of glycine in the range of 0.4-1.5% was revealed. Two methods for determining the antioxidant activity of the medium were tested: amperometric and coulometric ones. It has been found that the dynamics of changes in the antioxidant activity of the medium due to different glycine concentrations is the same when using both methods. The absolute quantity of the values of the integral antioxidant activity of the medium, measured by the coulometric method, is up to 10 times higher than the total content values of water-soluble antioxidants, measured by the amperometric method. It has been established that the coulometric method for determining antioxidant activity allows detecting a larger spectrum of antioxidants in comparison with the amperometric one. This is achieved due to the ability of electogenerated bromine to enter into a large number of redox reactions.

Изучена антиоксидантная активность инокулированной питательной среды на основе гидролизованного молока, ростовых факторов, глицина и закваски, содержащей симбиотические штаммы Lactobacillus acidophilus, L. bulgaricus, L. plantarum, Saccharomyces lactis. Выявлена прямая зависимость между антиоксидантной активностью среды и концентрацией глицина в интервале 0,4–1,5%. Апробированы два метода определения антиоксидантной активности среды: амперометрический и кулонометрический. Установлено, что динамика изменения антиоксидантной активности среды, обусловленная различными концентрациями глицина, одинакова при использовании обоих методов. Абсолютная величина значений интегральной антиоксидантной активности среды, измеренная кулонометрическим методом, до 10 раз превышает значения суммарного содержания водорастворимых антиоксидантов, измеренных амперометрическим методом. Установлено, что кулонометрический метод определения антиоксидантной активности позволяет обнаружить больший спектр антиоксидантов в сравнении с амперометрическим. Это достигается за счет способности электогенерированного брома вступать в большое количество окислительно-восстановительных реакций.
