إنجليزي. Brochothrix thermosphacta is a common meat spoilage bacterium. For the quantification of this bacterium STAA agar base with selective supplement has been utilized. R. thermosphacta has been isolated from carcasses, minced bovine and swine meats and also from equipment. Its role in meat and meat derivates alterations has been discussed and compared with the role of lactobacilli H2S+

Il germe e' stato isolato da carcasse, da carni tritate bovine e suine e anche dagli utensili. Non e' presente in quantita' significativa nei salumi fermentati. Il suo ruolo nella alterazione di carni e prodotti derivati e' stato discusso e paragonato a quello dei lattobacilli H2S+
