German. Bei der Venwendung von Milcheiweissen zur Stabilisierung von Emulsionen gewinnen neben dem traditionell angewandten Casein auch die Molkenproteine zunehmend an Bedeutung. Anhand der Stabilitaet einfacher Modellemulsionen zeigt die vorliegende Untersuchung Unterschiede bei der Verwendung von Caseinat und einem Molkenproteinkonzentrat. Aus der Messung der Aufrahmung mit einem Szintillationszaehler wird die Emulsionsstabilitaet in Abhaengigkeit von der Proteinkonzentration, der Oelsorte, der Emulgiertemperatur und der Oelkonzentration mitgeteilt.
