Influence of hydrocooling of Starking and Imperatore apples on the effectiveness of anti-scald and anti-rot treatments

Starking and Imperatore apples were hydrocooled in water, or in solutions of scald- and rot-preventing products, immediately after harvest or after a period of pre-ripening at room temperature. In Starking apples hydrocooling prevented softening of pre-ripened fruit, while it slightly limited the evolution of the red colour. Scald-preventing treatments were effective also when applied at 275 deg K. Hydrocooling with water did not increase percentage of fruit affected by storage diseases, while hydrocooling with scald- and rot-preventing solutions caused a slight increase of rot in Starking and of internal breakdown and lenticel blotch pit in Imperatore apples.

Per escludere l'eventualita che l'hydrocooling avesse effetti negativi sulla conservabilita delle mele, per due anni sono stati effettuati numerosi confronti sottoponendo i frutti al predetto trattamento termico immediatamente dopo la raccolta o dopo un periodo di ingiallimento in magazzino. E stato studiato l'effetto dei trattamenti conservanti (profilattici) sia contemporaneamente o separatamente all'hydrocooling. E risultato che gli additivi antiriscaldo e antimarciume sono efficaci anche se soluti nell'acqua di refrigerazione. Pertanto si apre la prospettiva e possibilita di refrigerare i frutti con acqua gia contenente i profilattici.
