Inglés. Starking and Imperatore apples were hydrocooled in water, or in solutions of scald- and rot-preventing products, immediately after harvest or after a period of pre-ripening at room temperature. In Starking apples hydrocooling prevented softening of pre-ripened fruit, while it slightly limited the evolution of the red colour. Scald-preventing treatments were effective also when applied at 275 deg K. Hydrocooling with water did not increase percentage of fruit affected by storage diseases, while hydrocooling with scald- and rot-preventing solutions caused a slight increase of rot in Starking and of internal breakdown and lenticel blotch pit in Imperatore apples.
