Extract: Comparative data on baking times, calculated energy consumption, physical characteristics, and palatability evaluations of 8 products cooked in preheated and non-preheated standard gas, continuous-clean gas, standard electric, and self-cleaning electric ovens are compared. Findings indicate that preheating the oven is not essential for acceptable eating quality in these 8 products and is an unnecessary use of energy. (author)
