Facts about cereals

Cereals are seeds of domesticated grasses that contain 10-15 percent water, 70-80 percent starch, 9-13 percent protein, fat, B vitamins, minerals and fiber. Cereals are an important source of protein, especially in developing countries where they constitute approximately 80 percent of the diet. Most grains are similar in structure. A diagram of a grain of wheat is included.
