Irradiation of onion powder: Effect on microbiology

Gamma irradiation of onion powders packed in bulk containers reduced microbial counts linearly with increasing radiation dosage. In addition, coliforms, yeast and molds were no longer detected following initial irradiation. Even when initial bacterial counts were high, exposure of onion powders to 900 Krads reduced counts to below 25,000 per gram; this was considered the minimum effective radiation dose. Further reductions were observed after 12 months in storage. Irradiation treatments of onion powders in commercial quantities effectively reduces microbial contamination, thus improving the storability qualities of perishable processed foods prepared with dehydrated onions as ingredients.
