The colour of wine as function of the ionized anthocyanic fraction influence of the maceration system

English. We carried out a study on the ionized fraction of anthocyanes and on their influence on determining the chromatic characteristics of wines, which are produced with different grapes and by more maceration systems. The results pointed out the close correlation betweem the values of the colouring intensity and the contents of the ionized anthocyanes both in musts and wines, even if in the latter it appeared different becouse of the highest contents of polymeric pigments. The colouring intensity of wines, smaller compared with that of musts, was caused by the decrease in the ionized anthocyanes, a decrease which wasn't counterbalanced by the contribution of polymeric pigments. We noticed, moreover, the ionization degree of anthocyanes, as to the pH value, increased as the solid-liquid contact time went on during the maceration

Si e condotto uno studio sulla frazione ionizzata degli antociani e sulla loro influenza nella determinazione delle caratteristiche cromatiche di vini prodotti con differenti uve e con piu sistemi di macerazione. I risultati dell'indagine evidenziano la stretta correlazione tra i valori dell'intensita colorante ed il contenuto in antociani ionizzati oltre che nei mosti anche nei vini, sebbene in quest'ultimi risulti diversa per il piu alto contenuto in pigmenti polimerici. Una intensita colorante dei vini minore rispetto a quella dei relativi mosti e causata dalla diminuzione degli antociani ionizzati non compensata dal contributo dei pigmenti polimerici. Si riscontra, inoltre, che il grado di ionizzazione degli antociani, correlato al valore del pH, aumenta con il prolungarsi del tempo di contatto solido-liquido durante la macerazione
