Spices have been valued for their flavor and seasoning for culinary purposes since time immemorial. A number of developing countries, mainly in Asia, have developed technologies to export various spice extracts as value added commodities based on indigenous spices. In Ethiopia, although there are a number of plants that can produce spice extracts, there is only the spice processing facility, namely, the Ethiopian Spice Extraction factory (ESEF). A reliable and good quality source of raw materials in one of the essential factors that contribute to the diversification of such spice extraction manufacturing industries.
