Traits of carcass quality in Czech Large White - sire line

Sixteen purebred pigs of the breed Czech Large White used in the Czech hybridization programme as the sire line were evaluated for some important carcass quality traits. The following average values were determined: backfat thickness: 18.0 mm, lean meat cuts content: 53.81%, MLLT area: 4,961 square mm, pH1: 6.08, pH24: 5.80, intramuscular fat content: 0.62%. The intramuscular fat content was significantly higher in boars (0.75%) than in gilts (0.52%).
