Biogenic amines in foods and their roles in human nutrition (Review)

Literature data on nature, effects on human health, factors affecting formation and occurrence of biogenic amines including polymines in both non-fermented and fermented foods are reviewed. The proposed safety limits and trends in methods of analytical determination are also presented.
