The chemical composition of 3 red beet cultivars (Little Ball, Czerwona Kula, Okragly Ciemnoczerwony) as depending on the size of the storage root was determined: dry weight, total acids, active acidity, simple sugars, total sugars and the betaine content. The chemical composition of red beet storage roots depended both on the cultivar and on the size of the root. It was also modified by the variability of soil and climatic conditions.
