The fat content of animal products and/or their fatty acid composition can be manipulated by animal breeding programmes, including the application of recent reproductive technologies, diet, use of metabolic regulators and future developments in transgenic livestock. Such changes have implications for livestock producers, sensory evaluation of food products, and metabolic effects in human nutrition and nutritionally-related diseases.
