Whether a person is a native-born Chinese or a second- or third-generation Chinese American, food maintains a central role in one's life. Since China has a strong agricultural history, its cuisine has been strongly influenced by China's geography. Cooking styles of the four regions of China are provided, and food and folklore are discussed. Typical eating styles are described. Food choices are compared with the food groups. Food adaptations that have been made by Chinese Americans are suggested, and nutrition counseling strategies are presented.
