The study of the production of prunes is important in this country both for the utilization of surplus fruit efficently and for the reduction of imports of candied fruit. With this research we wish to understand the process of sugar enrichment in prunes with reference to commercial applications. The process is based on direct osmosis with five different cycles being studied and the products of one cycle are chosen for the best organoleptic characteristics.
