The possibilities of soy bean products application in confectionary industry

The study of the use of additives - soybean products: BIOPRO 30, BIOPRO 31 and BIOPRO 32 in biscuits, waffels, crackers, cookies with a filling and tea cookies, has shown that the application of the tested additives is technologically acceptable, but with a small correction in the standard recipes, which functionally depend on the quality of the wheat flour. The portion of protein of the obtained product is greater in percentages with regard to the total energy value of product. The use of these additives is economically justified.
