Identification of Listeria monocytogenes in slaughtered animals, in meat and in meat products

A great number of unknown factors exist in the epidemiology of listeriosis. The smears were taken from 100 square cm of surfaces and immediately immerged in 10 ml UVM bouillon which was incubated for 24 h at 30 deg C. Listeria monocytogenes was identified in 5.3 samples. The smears issued from work tools were contaminated in 19.3, from ground meat in 62.1, from fermented sausages in 21.3 and from boiled sausages packed in vacuum in 16.7. In products treated thermically, in which the central temperature reached 71 deg C, no Listeria were found. The results showed a high percentage of contamination of meat with Listeria monocytogenes in Yugoslavia too and the succesful decontamination by heat.
