The biological value of Grana, Jana, Salwa and Liwilla winter wheat grain varieties was determined basing on the chemical test of amino acid composition and fractional analysis of proteins. The Cs (lysine) and EAA factors in the varieties of wheat grains increased in turn: Liwilla, Grana, Salwa and Jana. The highest contents of albumine and globuline fraction and glutenic type fraction of protein was found in Jana and Grana wheat grain
