Total protein and its fraction contents in skeletal muscle of hybrids of European bison with domestic cattle

The total protein and its fraction contents were determined in 20 hybrids of about 400 kg body weight and about 2 years of age. The results showed that hybrid meat as compared with domestic cattle meat contained more myofibrillar protein and less denatured protein and total nitrogen. In the subsequent fractions, i.e. sarcoplasmic, stroma and nonprotein nitrogen no differences were observed
