Sorption studies on dehydrated mango (Mangifera indica) pulp

Sorption studies were carried out with foam-mat dried powders of two processing mango varieties. Badami and Totapuri. The powders were found to be highly hygrocopic. The powders equilibrating at a relative humidity above 22% picked up moisture and lost crispness and became soft. Equilibrium moisture content of 4.3% for Badami and 4.4% for totapuri were found to be critical for the products
