Investigation of the influence of heat treatment and storing conditions on the change in the hydroxymethyl furfural content in milk treated by direct and indirect short-time sterilization has shown that it brings about the increase of the hydroxymethyl furfural content and that the increase is higher in the milk treated by the indirect short-time sterilization. After the treatment the changes in the hydroxymethyl furfural content depend on the storing temperature and time.
