Application of special coarsely milled maize grain in the production of pasta

The special corn semolina is the product obtained by dry corn processing under the condition of heat treatment and with corn germ separation. The results obtained showed several advantages of corn semolina use in pasta production: more expressed and better colour of pasta, more economic production, lower number of microorganisms and lower cholesterol content.
