Ethanol fermentation using yeast cells immobilized in alginate gel supplemented and non supplemented with soybean oil was studied. It was found that oil supplementation protects yeast cells to high ethanol concentration and allows to improve the fermentation yield and to obtain a higher final ethanol concentration
